Ingredients

  • 2–3 lbs boneless chicken breasts or thighs
  • 1 cup salsa or taco sauce
  • 1 packet taco seasoning (or chili powder, cumin, garlic, paprika)
  • Juice of 1 lime (optional)
  • Tortillas or taco shells
  • Toppings: cheese, lettuce, tomato, sour cream, avocado, hot sauce

Steps

  1. Place chicken in slow cooker; cover with salsa and seasoning.
  2. Cook on low 6–7 hours or high 3–4 hours until shreddable.
  3. Shred in the pot, stir, and keep on warm.
  4. Warm tortillas and set out toppings for a DIY taco bar.
  5. Refrigerate leftovers for bowls, quesadillas, or lunch-box tacos tomorrow.

Notes

  • Picky kids: Plain meat + cheese still counts as dinner.
  • Next day: Leftovers become bowls, quesadillas, or easy lunches.
  • Make-ahead: Start it in the morning and keep on warm until dinner.
