Seasoned ground chicken, rice, and tomato sauce tucked into bell peppers, topped with cheese, and baked until tender. Serve with salad and garlic bread for an easy, delicious dinner.
Ingredients
- 6 bell peppers (any color)
- 2 lbs ground chicken
- 1 cup cooked rice
- 2 cans or jars of your favorite tomato sauce (I used Hunt’s)
- Oil for the pan
- Onion powder
- Garlic powder
- Salt
- Pepper
- Italian seasoning
- Shredded cheese of choice (I used cheddar jack)
Steps
- Heat the ground chicken over medium heat. Add oil to the pan and cook the chicken until no longer pink. Drain any grease.
- Season with onion powder, garlic powder, salt, pepper, and Italian seasoning.
- Add one jar of sauce to the skillet and stir.
- Cut the tops off the bell peppers and rinse them.
- Add 1 cup of rice to boiling water and simmer slowly until done.
- While the rice is boiling, cover the bottom of a baking dish with sauce. Add the peppers to the pan and put shredded cheese in the bottom of each pepper.
- When the rice is done, add it to the skillet and stir.
- Stuff each pepper with the chicken mixture and top with more cheese. Add the rest of the sauce over the tops of the peppers.
- Cover with foil and bake in a 400°F oven for 1 hour, or until the peppers are cooked.
- For the last 10 minutes, take the foil off so the cheese can brown a bit.
- Serve with salad and garlic bread for an easy and delicious dinner.
Notes
- Cheese: Cheddar jack is my go-to — use whatever shredded blend your family likes.
- Sauce: Any favorite tomato sauce works; Hunt’s is what I use.
- Leftovers: Reheat covered so the peppers stay juicy — great for lunch the next day.
