Turned a gloomy, rainy day into a colorful cozy afternoon. While the kids were busy painting their pumpkins, I whipped up these super easy Fruity Pebbles marshmallow treats. They take almost no time to make, and seeing the bright colors next to their painted pumpkins made the whole kitchen feel so festive.

Save this for the next rainy day!

Ingredients

  • Half bag of jumbo marshmallows (or a full bag of mini)
  • 4 tbsp unsalted butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 6 cups rice cereal, colorful or not
  • 9x13 pan
  • Parchment paper

Steps

  1. Melt the butter on low heat.
  2. Add the marshmallows and stir until melted.
  3. Add the vanilla and salt.
  4. Fold in the rice cereal.
  5. Press into a parchment lined 9x13 pan.
  6. Let sit for 30 minutes to cool and harden, then cut up to serve.

Linewife notes

  • Low and slow: Keep the heat low so the marshmallows stay soft, not crunchy.
  • Colorful or plain: Fruity Pebbles make it festive. Regular rice cereal works too.
  • The mixing bowl: Melt and fold in a big bowl so the cereal coats evenly before it hits the pan.
